Dad doesn't even really like squash very much, but he made this sometimes when we had squash from the garden! I developed a taste for it cooked this way.
Crookneck Squash (Dad)
1 squash, cut into slices
2 tsp olive oil
A few shakes of garlic salt
Heat in the microwave for 3 minutes. Halfway through heating, pause and stir. Finish heating squash. If more than one squash is being prepared, the time should be adjusted. Add a minute and check on it after that point.
I started this blog so I could easily find and share my family's classic recipes.

Spinach Artichoke Dip
This is the delicious dip that Cash makes sometimes!
Spinach Artichoke Dip (from Cash)
3 cloves garlic
2 pkg thawed, drained frozen spinach
2 cans chopped, drained artichoke hearts
2 pkgs (or a little less) cream cheese
1 c Parmesan (or to taste)
Salt or garlic salt
Cayenne pepper (red pepper)
Chop garlic. Sauté with thawed and drained spinach* and chopped artichoke hearts until thoroughly heated. Add 2 packages cream cheese until melted and thoroughly incorporated. Add lots of Parmesan, a little garlic salt, and red pepper to taste. Stir until Parmesan is melted and everything is well mixed. Serve with sturdy crackers.
*Seriously. Get as much of the liquid out as possible!
